Healthy Meal Planning - Shrimp fettuccine with roasted pepper sauce

So many delicious components with this week’s recipe. I did not use red peppers in a jar, I used 3-4 fresh red peppers and puréed them with some olive oil. I also suggest using zucchini noodles in place of the fettuccine if you are watching your carbohydrate intake. It turned out fantastic! Enjoy!
