Healthy Meal Planning - One Pot Roasted Red Pepper and Sausage Alfredo

I often have friends and clients ask what I eat and what I would recommend for them. That’s why I started this Healthy Meal Planning blog, as an opportunity to share with all of you the healthy meals I really do cook in my own home. Some of the recipes are already created with healthy options in mind and others I modify a bit.

Take this recipe for example. I took the One Pot Roasted Red Pepper and Sausage Alfredo recipe and modified it just slightly. I used Isernos Italian mild sausage and gluten-free pasta. Don’t fear the gluten-free pasta, it really was yummy.

Healthy Meal Planning - Bacon Shrimp Pasta

Watch out for this one. You’ll want seconds. Delicious with warm bread. With or without the pasta, it’s delicious!

Spaghetti squash would be an excellent substitute for pasta with this dish.

Healthy sloppy Joe’s???? Yes!!! The flavors in this recipe are amazing! I use “no added sugar Heinz ketchup” and “sugar free G Hughes” bbq sauce. The red bell pepper adds a fantastic taste this dish. So good!

Healthy Meal Planning - Healthy Baked Turkey Enchiladas

Healthy twist on enchiladas this week. The zucchini and turkey make these a guilt free, light option for enchiladas. You can use corn tortillas to cut down on the carbs and they bake up really well with the red enchilada sauce. Very tasty! Enjoy!

Healthy Meal Planning - Shrimp fettuccine with roasted pepper sauce

So many delicious components with this week’s recipe. I did not use red peppers in a jar, I used 3-4 fresh red peppers and puréed them with some olive oil. I also suggest using zucchini noodles in place of the fettuccine if you are watching your carbohydrate intake. It turned out fantastic! Enjoy!

Healthy Meal Planning - Baked Quinoa-Crusted Chicken

Pretty awesome twist on chicken. We love quinoa and it’s even better baked on chicken breast. It brings out the nutty taste of the quinoa as it toasts up nice and crunchy. Serve with your favorite veggie and some cauliflower mashed potatoes. Superb!
